Responsibilities:

  • To effectively manage and motivate the butchery sales/production staff.
  • To ensure excellent meat cuts are provided for the butchery.
  • Ensure the smooth running of the butchery/Fresh product section.
  • To ensure the meat displays are of the highest quality.
  • To constantly strive for improvement in all areas of the butchery department to ensure that Hartley’s supermarket remains a leader in its field with minimal wastages.
  • Ensure all front of house staff assigned to the butchery is trained to the highest level in exceptional customer service.
  • Ensure their training includes knowledge of meat cuts, varieties, and basic cooking tips.
  • Counter staff must be trained before using any machinery, chemical, health, safety and food hygiene procedures and processes whilst working in the butchery department.
  • Ensures that Hartley’s butchery staff carry out their duties to the best of their abilities at all times, liaising with supervisors where appropriate.
  • Be responsible for the production of a consistently high standard of all meat prepared in the butchery for sales both in-store and corporates.
  • Constantly develops new products and reviews existing products to ensure that the butchery continues to offer excellent products with sustainable and profitable margins.
  • Ensures that the budgeted margins are obtained on all butchery products.
  • Controls the pricing structure of all purchased raw meat carcasses and ensures all retail and wholesale prices are correct.
  • Follows the proper ordering process of raising requisition to the Purchasing Department.
  • Ensures the implementation of the Company’s procedure for processing supplier deliveries.
  • Ensures that returns to suppliers are monitored and respective credits are received
  •  Records and monitor of all wastage from the butchery.
  • Ensures that the highest standards of hygiene are maintained in the butchery and maintained at all times.
  •  Ensures the butchery equipment’s and preparation area is kept clean, tidy and secure at the end of each working day and this is recorded in the ‘End of Day’ log.
  • Ensures all butchery staff adhere to the Safety guidelines and all staff wear the appropriate safety protection provided e.g. gloves and aprons at all times.
  • Deals with customer complaints and enquires related to butchery/dairy.
  • Ensures first-class customer service is provided by the butchery department at all times.

         Requirements
